Why didn't kid buu use instant transmission to avoid being hit with the spirit bomb? I presume Goku could trace his energy and follow him, but not if buu were to suppress it.

Well even if he can't would Goku be able to carry around a spirit bomb from planet to planet, had buu opted to use IT?

Heat of the moment. For one, I'm sure the Spirit Bomb was fast enough to be in his face in an instant. :p

But then, he was shocked when he saw it coming at him. He copied Kibitoshin's Instant Teleportation, but I still think he needed a clearer mind than what he had to use it and get out of there.

In other words.. More reaction time or something like that for him to think and use it.

Looky there. I didn't say plot once except now. :p

Hmm.. He was able to hold it off at the beginning. Maybe that's why he didn't bother. He died because of the Dragon Balls' wish as well as Goku's final SSJ push.

I was pondering that point as well, but kid buu didn't really seem to have pride; just mindless destruction. So I don't really think he cared about proving himself or competition.

The spirit bomb didn't seem to be so fast that he wouldn't have enough time to use IT, but your probably right about him not being focused and essentially being caught off guard by such a colossal ball of energy.

If Pure Boo could sense ki, which I'm doubting because it was specifically pointed a something special for Evil Boo, then he wouldn't know that the Genki-Dama would be stronger than him. It would especially be less pivotal since he was able to hold it for a moment before Goku's stamina was refreshed.

If he could sense ki, then he was probably too flustered to act.

That's the only kicker, although we don't know how Kibito's teleportation works. Boo had been to the Kaioshin planet before, so maybe that was going to be his next stop regardless, and it was mere coincidence that Goku and Vegeta were there; maybe Boo recognized Kibitoshin to an extent and it jogged his memory.

Instant Transmission (Shunkan Ido) – Instant Transmission is a unique and very useful technique Goku learned on Yardrat from the Yardrats. With this technique, he can travel to any location he desires, as long as there is a lifeform there he can recognize. Notably, he uses this technique to teleport himself and Cell to King Kai's planet when Cell intends to blow up Earth. Goku can also use this technique with other attacks, such as when he charges a Kamehameha Wave, teleports to right in front of Cell and blasting it right in his face.

Instantaneous Movement (Kai Kai) – The ability to teleport to any desired location. Unlike the Instant Transmission technique, the users of this ability can move anywhere they want, without having to focus on a power level. There are several variations. Kami and Fortuneteller Baba can use this ability to teleport between Earth and Other World, while Kibito Kai can use this to teleport anywhere he wants.

I thought those were Daizenshuu definitions at first.

I don't believe the kai-kai requires one to focus on a specific power, though.
